This is foolproof. Use as a spur of the moment answer to a need for sweets, or as comfort food on a rainy night, or simply because rice pudding is not quite so bad for you as mud cake. It is even suitable for a camping trip menu.
You’ll need;
- 2 cups rice (aborio is best for this, but any white rice will do)
- 4 cups of water
- 1 tin of sweetened condensed milk
- 1 cup cream (I used long life, having reached that time of week when the cupboard was bare)
- vanilla
- extra milk
Method:
- Place rice and water in medium saucepan, bring to the boil, cover, simmer for 15 mins, or until soft.
- Add condensed milk, cream and vanilla, stir, and leave stand for 5 mins.
- The rice will thicken on standing, as it absorbs the condensed milk and cream, so add extra milk until it reaches the consistency you like best.
- Enjoy warm or chilled.

OK–I know I am opening myself up for some teasing by asking this but….shouldn’t there be some sugar in here somewhere??

Um. In Canada the condensed milk is sweet… is it not sweet in the States? Is it sweet in Australia?
(Never used the stuff here… so dunno if it is sweet in Germany)
You could always throw some Tang in there *swing and miss* *running for cover*…

Dandelionmom, what could you be thinking? Surely you don’t mean you would use a can of condensed milk and add sugar? Just how sweet are your puddings?? (I would add one of those eyes popping out smilies if I could!!)
Anitz, it sounds like your condensed milk is the same as ours. Condensed milk here has 55.9 grams of sugar per 100grams. Very sweet stuff, and we use it on toast in place of jam, sometimes.

We have BOTH condensed milk AND sweetened condensed milk–the one is a plain milk with a lot of the water evaporated out-to give a creamier result. We have the sweetened too-you can cook it awhile and get dulce de leche
sounds MUCH better with SWEETENED condensed milk!–never tried the stuff on toast before but it makes an AWESOME homemade hot cocoa with plain dutch cocoa powder!

Oh, we have condensed milk (sweet) and evaporated milk (not sweet) too. But we call evaporated milk…evaporated milk! But I will edit the post and change it to sweetened, so as to avoid confusion.

Just noticed the recipe on the Internet, good to see it here, I’ve been making it this way for over 30 years, the best rice cream ever
) Tips, once the rice is cooked if there is any water left then strain it, BUT do not rinse it as you need the starch to get the creaminess, do not let the rice sit in the water once the rice has cooked, as soon as the rice has cooked put the other ingredients in straight away as so that the rice with absort the milk and condensed milk.
)
The reason that sweetend condensed milk is better than sugar is that once you have heated it and continue to simmer it then it turns into a caramel sugar taste, And if you are going to let it cool to eat it cold then you need to put more milk in it as once it cools it will become stiffer, like cold mashed potato.
My children grew up on this for desert, now they cook it for their children, cheap, serve on its own or with sliced peaches, apricots, or hot with a spoonful of apricot jam

Well, this is very different to my normal Creamed Rice, which is much cheaper but nowhere near as yummy. I made this last night for my boys. Yep! It was a hit! We loved it… thanks for sharing.
